KlikFakta.com – Micin atau Monosodium Glutamat (MSG) jadi bumbu masak populer bukan hanya di Indonesia tapi se-Asia. Hampir semua masakan menggunakan micin untuk membuat rasa makanan lebih nendang.
Namun di sisi lain masih banyak kekhawatiran tentang keamanan dan kesehatan micin. Nyatanya, micin tidak slalu berakibat buruk.
Ketua Bidang Komunikasi Perkumpulan Pabrik Monotarum Glutamat dan Asam Glutamat Indonesia (P2MI) Satria Gentur Pinandita mengatakan slama ini banyak informasi keliru di masyarakat soal MSG.
Di antaranya isu micin mengakibatkan kelebihan berat badan (obesitas), kanker, hipertensi, hingga kebodohan.
Padahal, kata Satria, kandungan natrium dalam micin tidak akan mengganggu kesehatan.
“Natrium yang sama sebagaimana terdapat dalam garam dapur atau garam meja, sedangkan asam glutamat adalah asam amino yang secara alami terdapat dalam daging, ikan/seafood, sayuran seperti tomat, bawang putih, kentang, dan sayuran lainnya, serta dalam rumput laut jenis konbu,” katanya, Selasa (23/5).
Asam glutamat dengan jumlah lebih banyak juga ada dalam makanan fermentasi seperti keju, kecap kedelai, kecap ikan, ikan peda, dan sejenisnya.
Micin, bumbu masak populer satu ini tidak mengurangi gizi makanan. Begitu ungkap dokter spesialis gizi RS Hermina Malang, dr. Maretha Primariayu.
“Bahkan, asam amino glutamat yang terkandung dalam bumbu umami seperti MSG dapat membantu meningkatkan selera makan. Peningkatan selera makan ini membantu dalam pemenuhan asupan gizi yang baik,” katanya.
Sementara Dosen Teknologi Pangan Institut Pertanian Bogor, Hanifah Nuryani Lioe menambahkan jika micin tidak menimbulkan efek negatif. Bahkan nilai acuan keamanan yakni ADI (acceptable daily intake atau asupan harian yang dapat diterima) berlabel “not specified”.
Ia pun membantah jika penggunaan micin bisa menyebabkan hipertensi. “Kandunagn Na di MSG lebih sedikit dibandingkan garam dapur sehingga risiko hipertensi akibat konsumsi natrium berlebih lebih tinggi pada garam dapur pada takaran yang sama,” katanya.
